Gone are the days of mom’s chicken noodle soup. Our blistering Canadian December nights call for a soup that can stand alone as a meal all on its own. There’s a whole new world out there filled with flavours that can tantalize your taste buds from the very first sip!
I’ve recently made a delightful discovery…a soup and salad doesn’t have to be the boring and mundane meal that you settle for when there’s nothing else is. This meal has become my favourite now that I’ve expanded my palate and discovered all the wonderful combinations that I can partner. A delicious bowl of creamy butternut squash soup with a crisp Arugula and Gorgonzola cheese salad mixed with roasted pecans and a zesty balsamic vinaigrette topped with fresh pear…all the different flavours work so well together and satisfy every craving I have from the sweet to the savory. I fell in love with this combo after a particularly tough day and boy did it hit the spot! I highly recommend! I will say one thing, nothing can replace mom’s chicken noodle soup when I have the sniffles. Not the soup. And not mom. Happy exploring everyone!
